An East Village Idiot Thanksgiving

Thanksgiving is just around the corner. I have no extended family joining my immediate family for dinner in Rhode Island, so it’ll be just five of us - eating enough food for about fifteen.

The key to Thanksgiving is training. You have to prepare your stomach for the onslaught it will face on Thursday. So, to get my stomach in shape, I will be having Chipotle for lunch.

It wasn’t too long ago, when I was just the East Village Rebellious Teenager, that I was a vegetarian at Thanksgiving. My plate was dotted with piles of vegetables, starches, and not much else. In fact, I sometimes claim that Thanksgiving Day, 2000 was the first time I had eaten meat in nearly two years. Even I will admit now, however, that I snuck a piece of turkey at Thanksgiving in 1999. Let’s be serious. How can those poor vegetarians get by on Thanksgiving?

There’s always those alternative foods, like Tofurkey. But given the new trend towards combination meats, such as Turducken, it’s high time that vegetarians get a little more creative. So, I introduce to you… Topexturchilog!

Tofu, stuffed with tempeh, stuffed with textured vegetable protein, filled with vegetarian chili, and topped with a tofu dog that gives the big middle finger to those nasty meat-eaters. Yum!

Aren’t you hungry just looking at it?

    there’s something in those chipotle burritos that expand in your stomach to make you feel like you’ve eaten double the burritage.

    And for the really adventurous, a little melted veggie slices (imitation processed cheese slices - can you get any more authentic?) on top
